To manage, lead and motivate the Pastry team to provide consistently outstanding service to guests

  • Mentor, train & coach team members
  • Manage rota, work load & resource distribution within & across teams
  • Interviewing, hiring, induction & succession planning of team
  • Identify training needs, design & track training for department
  • Monitor & evaluate team performance & perform PDP for all team members
  • To hold daily, weekly and monthly meetings, ensuring departmental and hotel wide information is shared

To be responsible for the Pastry kitchen and its daily operations

  • Act as a deputy to the Head Pastry Chef
  • To assist with the planning of the day to day business within the Pastry kitchen effectively to meet the service and operational requirements
  • Produce and deliver quality food and enable operational excellence
  • Establish job methods and supervise on a regular basis, and correct if necessary, cooking standards: to maintain a high quality of food and service on daily basis.
  • To assist with writing and checking standard recipes for all dishes to ensure proper portion control, uniformity of taste and quality for approval by Executive Chef
  • To carry out quality control checks, ensuring presentation, quality of food and service standards are adhered to
  • To complete material check lists, e.g. mise-en-place, within own department for all sections
  • To check daily function sheets with Main MEO Board located in the main kitchen
  • Responsible for daily ordering and purchase control
  • To control food costs according to agreed budgets
  • To anticipate, plan for future improvements and advancements in food technology to enhance food service and operational processes to build the global reputation of Coworth Park
  • To ensure consistent five star operational performance to optimise short and long term profitability
  • To act as a key spokesperson for the Pastry kitchen to achieve Coworth Park�s vision and build and enhance positive brand image - with internal and external stakeholders
  • To run an environment that is clean, tidy and organised at all times, ensuring maintenance of equipment and machinery is carried out regularly
  • Extensive experience as a Senior Pastry Chef in a 5 star environment
  • Experience of menu development
  • Strong understanding and application of French, Asian, British and International cuisine
  • Chocolate and/or bread making knowledge
  • Management and leadership experience
  • Experience of ordering systems and costing processes
  • Indepth knowledge and application of 5 star kitchen processes and operations
  • Excellent communication and interpersonal skills
  • Team motivator

  • Good IT knowledge
