Staff development & training

  • Liase and work alongside Head Chef to recruit and train staff when required and ensure all new staff members have full understanding of job requirements
  • Ensure the kitchen team maintain high standards of work
  • Hold informative and inspiring daily training briefings and FoH menu tastings
  • Write an intelligent rota with consideration for the welfare of the kitchen staff
  • To deal responsibly with any kitchen staff issues and queries on a daily basis
  • Ensure staff are clean, presentable and in correct uniform on all shifts
  • Take responsibility for personal development by attending training sessions or meetings as required and maintain knowledge of current industry trends


  • Maintain a clean working environment in line with all current Health, Safety and Hygiene regulations, adhering to Food Handling and Villa Mamas SOPs
  • Oversee the quality of food in terms of its preparation, cooking and presentation
  • Ensure all areas of the kitchen are clean and tidy at all times
  • Ensure all kitchen opening and closing procedures are followed and all relevant checklists and cleaning schedules completed as required
  • Guide and oversee all pre-service prep, making sure the other chefs and KPs are working efficiently and effectively
  • Write complete and fair prep/task lists for all kitchen staff each shift and ensure these are seen through
  • Delegate service sections and ensure smooth running of the pass during service whilst maintaining kitchen consistency to highest standard
  • Ensure quality and completeness of all suppliers’ deliveries and manage invoices and credit notes accordingly
  • Regularly update Head Chef on suppliers’ service, product/ingredient quality and credit notes
  • Ensure all food and ingredient deliveries are delivered, unpacked and stored correctly, including correct labeling
  • Work with Head Chef to ensure all dishes and menus are correctly costed to the agreed GP and be responsible for ordering accordingly
  • To complete all necessary kitchen administration documents and update files as necessary
  • Help to maintain a healthy working environment between FoH and kitchen by communicating openly and frequently
  • Ensure that all appliances, fixtures and fittings are safe and work, report any faults and ensure maintenance is carried out in a timely manner


  • Minimum 2 years experience
  • Experience in high volume, upscale restaurant kitchens preferably with knowledge of Arabic cuisine
  • Language Skills: English required, Arabic an asset
  • Working proficiency in MS Office
  • Excellent communication skills, verbal and written
  • High energy, positive attitude, willingness to learn and grow
  • Well-presented and well groomed
  • Results oriented with ability to prioritise and attention to detail
  • Team leader with an appreciation for a fast-paced diverse, multi-cultural environment


  • Approximately 44 hours over 5 days
  • Competitive salary
