With no difficult shifts to cope with, you’ll be able to pass on all you know as you work with prisoners in the kitchens, support them so that they’re safe and efficient, and see that security is maintained.
It’ll involve preparing and cooking food, using ingredients wisely to minimise waste and thinking how to cater effectively for specialist diets. You’ll also prepare orders for food and other catering goods, check in any deliveries and ensure stock rotation. As importantly, you’ll be co-ordinating food, ingredients and staff - including the prisoner workforce - day to day, issuing tools and checking tool cabinets.
As a natural people person, you’ll have no problem understanding others and knowing when to delegate. On the skills side, you should have a level 2 & 3 certificate in Food Production within Hospitality and Catering or similar, plus a Food Hygiene Certificate Level 2. Of course you’ll need to be familiar with all current health, safety and hygiene regulations for working in a kitchen, and you’ll be more than competent in an industrial kitchen and cooking for large numbers.
