Sous Chef /Chef de Partie  - £18,000-£26,000 + tips

The new Fleece Hotel Richmond is set for opening in April 2018 and we are looking for a strong sous chef and chef de parties to join our ambitious team that is aiming to be the best in the area.

The hotel will have a 40-cover fine dining restaurant, we are aiming for 3 rosettes plus there’s a more casual small plates lounge area that can seat up to 30.

This is a rare opportunity to be part of something special, to have the chance to be part of the opening team and work with a Michelin star trained, 3AA rosette head chef, offering a unique food experience for guests.  Experience, passion and enthusiasm are must for the positions.

As Sous Chef, you will:

- Work under a talented Head Chef within a professional kitchen where there is further opportunity to progress in the future

-Be working across all sections as required and as Sous Chef your role will be to liaise closely with the Head Chef and provide a link to the other chefs in the brigade

-Ensure everyone is working to an exceptional standard at all times, supporting those who need it

-Be expected to have good creative flair and a real passion for your work

-Be working within an experienced and very busy brigade

As chef de partie, you will:

  • Be expected to run all sections to a very high standard at all times
  • Train junior members of staff
  • Be trained and knowledgeable on food safety
  • Have experience in multi rosette restaurants
