Head Chef | Exciting new high end opening | £35-40k
The Basics – We’re looking for a dynamic and passionate head chef to be part of this once in a life time reopening in the centre of Glasgow.
About Us – Mackintosh at The Willow is set to open on 7th June 2018 following a £10m exacting restoration of the original Willow Tea Rooms Building on Glasgow’s Sauchiehall Street. Completed in 1903, Charles Rennie Mackintosh, Glasgow’s most famous architect, created one of his most iconic buildings designing every detail from the architecture down to the cutlery and crockery. We’ll be re-opening with 200 covers, split across 4 tea rooms to Mackintosh’s original designs plus now featuring a state of the art visitor centre with meeting facilities in the adjacent building. In its day this was a thoroughly modern social enterprise venture and this remains our attitude and guiding light as we seek to restore its rightful place at the very heart of Glasgow’s social scene.
The Concept – Having gone to such lengths to recreate the historic interiors it is only natural that we should look to pair that with classical Scottish and European cuisine. Our classics however will be modern day interpretations conjuring the flavours and combinations from the turn of the 20th Century. As you’d expect we fixate over all things brunch, finding excuses for “Elevenses”, serious about light lunches but most of all exacting purveyors of Afternoon and High Teas. We’re far from stuffy, we want a serious sense of adventure and of course humour in all that we do. Initially we’ll operate our all day dining facility from 9am-6pm, 7 days a week, but in time we’ll look to extend this further.
The Role – As Head Chef you’ll be heading up your team with overall responsibility for the kitchen and all it produces. You’ll liaise with suppliers, negotiate pricing, manage stocks, control budgets, write recipes, have exacting food hygiene and HACCP standards… and all the usual stuff that you’d expect as an already highly competent chef.
About You – From a food perspective you’ll immediately get what we’re all about and lead the team, creating menus and a real sense of energy in the kitchen. Whether it’s a kedgeree or an Arnold Bennett you bring the same sense of finesse and passion and yes you’ll have a hunger for long forgotten dishes to reinvigorate and “Tweet” about. The kitchen team won’t be ordinary either, we have fully committed to a “Social Enterprise” philosophy so you’ll be inspiring a young brigade made up, in part, by trainees from our partners The Prince’s Trust. We very much therefore need you to be a people person, someone who has the patience and commitment to bring out the best. This is a job that will make a real difference and we want everyone to buy into our culture and not just the food.
You’ll have had experience within quality establishments, preferably rosetted, and held comparable head chefs roles. Having a passion and love for the classics and culinary history is an absolute expectation.
